Glazed Autumn Vegetables with Topinambur Syrup

Ingredients:

  • 500g mixed autumn vegetables (e.g., carrots, butternut squash, beetroot), washed and cut into bite-sized pieces.
  • 3 tbsp Topinambur Syrup
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (e.g., thyme, rosemary) for garnishing

Instructions:

Preheat the oven to 200°C.

  In a bowl, mix the prepared vegetables with 2 tablespoons of Topinambur syrup, olive oil, salt, and pepper to coat them evenly. The Topinambur Syrup will enhance the vegetables with a tasty crust during baking.

  Spread the seasoned vegetables on a baking tray lined with baking paper and bake in the preheated oven for about 20-25 minutes, until tender and lightly browned. Stir occasionally to ensure even cooking.

  Remove the roasted vegetables from the oven and drizzle the warmed Topinambur syrup evenly over them. Stir gently to coat the vegetables with the syrup.

  Arrange the glazed vegetables on a serving platter and garnish with fresh herbs.

This recipe gives the savoury autumn vegetables a pleasant sweetness and a slightly caramelised note thanks to the Topinambur Syrup
